For my lawn mower I've been using one of those 12v oil pumps with the plastic hose on each end. You just stick it down the filler neck and suck out the oil into a translucent gallon jug so you can see how much comes out. Then you can be sure to add back the same amount of new oil.

Should work on an ATV. Never had a skid plate, but I can imagine oil running all over the place when the plug is first taken out. All though, if you put a 2" long piece of PVC (as big a diameter as fits in the hole) into the skid plate hole and used an extension socket to reach the nut the oil would track through the PVC and no mess on skid plate.  :2cent:

Those little oil pumps work slick. I know a boat motor repair man uses it and it does get all the oil out, and without any mess.

Wouldn't the skid be close enough to the frame and rigid enough to put a bead of silicone around the drain hole between the crankcase and the skid or would it come loose right away?

Easier, yes, but the pump doesn't pull out residues laying on the bottom of the crankase. Probably not a big deal if you change frequently.

But I like to pull my drain plug and see what's stuck to the magnet. Yeah, it's messy, but degreaser is cheap.

The same thing that I was thinking!
